Macadamia Nut Cookies with Chocolate
Prep time: 1 hour
Pre-heat oven to 350 degrees
1 cup butter
1 cup sugar
1 cup packed brown sugar
1 tablespoon vanilla
2 extra-large eggs
2 ½ cups unbleached flour
1 teaspoon kosher salt
1 teaspoon baking soda
2 cups chopped macadamia nuts
2 cups semi-sweet chocolate chips
Mix together the butter, sugar, packed brown sugar and vanilla. Add the eggs and continue to mix.
In a large metal bowl, whisk together the unbleached flour, kosher salt and baking soda. Add the flour mixture to the wet mixture and blend until incorporated.
Add the macadamia nuts and semi-sweet chocolate chips.
Once all the ingredients are incorporated, drop onto a greased cookie sheet and bake at 350 degrees for 12-14 minutes.
