4 pints fresh strawberries, cleaned, peeled and cored
6 cups chopped, seedless watermelon
2 seedless cucumbers, peeled and chopped
2 cups fresh squeezed orange juice
Juice and zest of 2 lemons
Juice and zest of 1 lime
¼ cup extra virgin olive oil
1 sprig of fresh mint
1 teaspoon pepper
½ teaspoon sea salt
Place all of the chopped fruit in a bowl. Place 1 cup of the fresh squeezed orange juice in a blender with ½ the chopped fruit, citrus zest and juice olive oil, salt and pepper. Blend on high in 2 batches until all of the ingredients are incorporated and smooth.
Serve with a fresh sprig of mint and chopped strawberries.
