Citrus and Herb Grilled Chicken, Healthy and Delicious!
I came up with this recipe last weekend. We had some guests coming over, and I didn’t want to make traditional barbecued chicken. Something lighter sounded good because it was a hot, muggy afternoon. This recipe turned out great- the end result was a light and fresh tasting piece of chicken. This marinade also works well with white fish such as halibut, Chilean sea bass, and swordfish. If you’re a vegetarian or vegan, try using this marinade on eggplant, zucchini, squash, fresh garden tomatoes, and corn.
Prep time 30 minutes Serves 6 Ingredients 6 skinless, boneless chicken breasts ¼ cup extra virgin olive oil 2 tablespoons organic honey 1 small bunch of chopped basil Zest of 2 navel oranges Zest of 2 lemons Zest of 2 limes 1-teaspoon fresh cracked black pepper 1-teaspoon Kosher or sea salt Directions Place the chicken breasts on a clean, sanitized cutting board and tenderize. Place the remaining ingredients in a large bowl, and mix with a whisk until everything is incorporated. Place the tenderized chicken in the marinade bowl. Make sure all of the chicken breasts get coated with the mixture. Let the poultry marinate for 1 hour. Grill the chicken until done, then let sit for 5 minutes. Serve and enjoy!
