Candied Baked Sweet Potatoes Recipe
This is one of my favorites- it’s usually served as a side, but may be prepared and eaten as-is. The flavors are plentiful- it’s a dish you won’t soon forget.
Prep-time 1 hour
Serves 6-8
Pre-heat oven to 375 degrees
Ingredients:
6 large sweet potatoes or yams, peeled and sliced
6 granny smith or honey-crisp apples, peeled and quartered
½ cup granulated sugar
½ cup brown sugar
1 cup oats
1 cup chopped pecans
½ cup dried cranberries or dried cherries
3 tablespoons flour
1 teaspoon cinnamon
½ teaspoon nutmeg
1 teaspoon salt
1 tablespoon fresh cracked black pepper
¼ cup melted butter
¼ cup organic honey
Directions:
Place the sliced sweet potatoes in a pot of boiling water and cook for 4 minutes. Strain the potatoes, then rinse with cold water. Once the potatoes are cooled, strain again, and place on paper towels.
Combine the sugar, brown sugar, oats, chopped pecans, dried cranberries or dried cherries, flour, cinnamon, nutmeg, salt and pepper in a large bowl and mix thoroughly.
Add the apples and sweet potatoes to the dry mixture and toss gently making sure the apples and sweet potatoes get coated evenly.
In a greased oven-proof baking dish, place a slice of apple, then sweet potato- repeat this process until the entire pan is filled. Place the excess topping over the potato-apple mixture. Drizzle the melted butter over potatoes and apples; bake at 375 degrees for 30 minutes. Remove from the oven, drizzle the honey on top and bake for an additional 20 minutes.
Serve immediately.
