Gluten Free Turkey Meatloaf
Looking for an alternative to traditional meatloaf? My gluten-free turkey meatloaf recipe has fewer calories, and is just as flavorful.
Pre-heat oven to 350 degrees
Prep time: 1 hour 20 minutes
Serves 6-8
Ingredients:
2 pounds ground turkey
2 large eggs, beaten
2 ½ cups ground oats
1/3 cup skim milk (you may substitute water if you are lactose intolerant)
1/3 cup good quality tomato sauce
3 tablespoons extra virgin olive oil
½ cup minced sweet onion
½ cup minced celery
½ cup minced carrots
1 teaspoon fresh thyme
3 tablespoons chopped Italian flat-leaf parsley
2 tablespoons fresh cracked black pepper
1 tablespoon Kosher salt
Directions:
Place 3 tablespoons of extra virgin olive oil in a sauté pan over medium high heat and sauté the onions, garlic, and carrots for 3-4 minutes or until they become slightly brown and caramelized. Place the sautéed veggies on a sheet tray and let cool in the refrigerator.
Put the turkey, eggs, tomato sauce, and oats in a mixing bowl. Work the mixture until all of the ingredients are incorporated. Add the skim milk (or water) and the cooled vegetables into the turkey mixture- blend thoroughly.
Lastly, add the fresh thyme, parsley, salt and pepper and mix.
Roll the turkey mixture into a loaf-form and place on a greased baking sheet. Cook for 1 hour in a 350-degree oven making sure to reach an internal temperature of 165 degrees.
Let the turkey loaf sit for 10-15 minutes before serving.
