Tiramisu Recipe
Tiramisu is one of my favorite desserts; its rich texture and delicious coffee flavor make for a perfect after-dinner treat. For best results, make this Tiramisu Recipe the day before- the longer it sits, the better it gets.
Tiramisu
Serves 6-8
Ingredients:
8 cups whipped cream
¼ cup powdered sugar
1 teaspoon vanilla
1 cup mascarpone cheese
48 packaged lady fingers
4 cups double-brewed espresso
½ cup granulated sugar
¼ cup good quality whiskey, or coffee-flavored liquor
3 tablespoons shaved chocolate
3 tablespoon cocoa powder
1 cup assorted fresh berries
Directions:
Brew 4 cups of good quality espresso. Place the brewed coffee back into the coffee make, and re-brew using fresh grounds. While the coffee is hot, add the granulated sugar and liquor. Place the coffee in the fridge and let cool completely.
In a clean stainless steel bowl, whip the cream until soft peaks form. Add the powdered sugar, vanilla, and mascarpone. Beat for one minute- until the mascarpone cheese is fully incorporated and firm peaks form.
Briefly soak 1/3 (16) of the lady fingers in the cooled coffee-liquor mixture, and place in the bottom of a 9 X 13 pan. Add a layer of cream on top of the lady fingers. Repeat this process until you have built three layers, ending with a layer of cream.
Dust the top of the tiramisu with shaved chocolate and cocoa powder.
Let the tiramisu set in the fridge for an hour.
Cut into squares, dust with some additional shaved chocolate and cocoa powder, fresh berries and serve.
