Watermelon Lollies
I came up with this recipe a few weeks ago for a party I catered. These bite-sized appetizers are easy to make, and are the perfect refreshing summer treat!
Savory Lollies
Serves 6 to 8
Ingredients:
2 pounds of fresh seedless red grapes- as firm as possible
8 ounces of goat cheese
2 cups of finely chopped pecans
4-6 cups of cubed watermelon
Italian flat-leaf parsley
You will also need:
16 wooden skewers, 2 to 3 inches long
Directions:
Remove the grapes from their stems, and set in a bowl.
Place 1 tablespoon of goat cheese on a grape and roll in your palms until the fruit is entirely covered.
Next, place 1 tablespoon of chopped pecans in your hand, then roll the cheese-covered grape until it is covered.
Place a piece of watermelon on a skewer. Next, place a leaf of Italian parsley on the skewer until it touches the top of the watermelon (you may also use fresh mint or basil leaves).
Lastly, pierce the grape with the skewer until it touches the top of the Italian parsley.
Serve immediately!
