Banana Bread Recipe
This is delicious, nutritious bread that is great for breakfast or a snack.
Prep time: 1 hour 20 minutes
Pre-heat oven to 350 degrees
Ingredients:
4 ripe bananas
1 cup granulated sugar
1 stick softened butter
1 tablespoon vanilla
2 large eggs
2 tablespoons heavy cream
2 ¼ cups unbleached flour
1 tablespoon baking soda
1 tablespoon baking powder
1 teaspoon salt
1 cup chopped walnuts
1 cup dried cherries
Directions:
Sift together the flour, baking soda, baking powder, and salt- set aside.
Mix together the sugar, butter, and vanilla. Add the eggs and heavy cream- incorporate until fully mixed. Place the 4 peeled bananas in the bowl and blend for 30 seconds.
Add the flour mixture to the wet mixture- blend until a batter forms, approximately 30 seconds – do not over mix.
Fold in the chopped walnuts and dried cherries.
Place the batter in a greased loaf pan and bake at 350 degrees for 50 minutes, or until a toothpick placed in the center comes out clean.
Let the bread sit at least 30 minutes before slicing.
