Chicken Salad with Tarragon, Pecans and Grapes
One of my favorite recipes is Chicken Salad with Tarragon- this also contains pecans, and grapes in it- the added texture and flavors go together perfectly.
Prep time: 30 minutes
2 pounds cooked chicken cut into ¼ cubes
1 cup mayonnaise
½ cup Greek yogurt
½ chopped pecans
1 cup red or green seedless grapes, cut in half
juice from 1 lemon
1 teaspoon tarragon vinegar
1 teaspoon chopped fresh tarragon
1 tablespoon fresh chopped Italian flat leaf parsley
1 teaspoon Kosher salt
1 tablespoon fresh cracked black pepper
Place all of the ingredients in a large bowl- mix gently until everything is incorporated.
Let salad set in the refrigerator for 30 minutes, then serve.
