Cold Cucumber Soup Recipe

Serves 10 Prep time 30 minutes Ingredients 1 quart cubed seedless cucumbers + 2 cups ¼ inch cubed cucumbers 2 cups whole fat Greek yogurt 2 cups sour cream 1-quart heavy whipping cream ½ cup each, ¼ inch chopped red, yellow, and orange peppers 2 cups chopped Roma tomatoes ¼ cup, ¼ inch chopped red onion Zest and juice of three lemons 3 tablespoons chopped fresh dill 2 tablespoons chopped fresh Italian flat-leaf parsley 1 bunch fresh basil Salt and pepper to taste Directions In two batches, place the cubed cucumbers, Greek yogurt, sour cream, whipping cream, and salt and pepper in a blender- mix on high-speed until smooth and creamy. Pour the mixture into a large glass or metal bowl. Add the remaining ingredients. Taste, and adjust for seasoning. Drizzle with extra virgin olive oil, and serve immediately.
