Grilled Chicken Salad with Walnuts
I’ve always liked chicken salad- it’s easy to make, and makes for a delicious meal, especially during the summer.
Herb grilled chicken salad with walnuts is a tasty meal, especially when served on a rich, buttery croissant.
Here’s the recipe:
Serves 4 to 6
Ingredients:
3-4 pounds of skinless boneless chicken breasts
2 tablespoons olive oil
4 cloves of garlic, chopped
2 tablespoons fresh sage
2 tablespoons fresh oregano
2 tablespoons fresh thyme
½ teaspoon each of salt and pepper
½ cup mayonnaise
½ cup chopped walnuts
Zest of 2 lemons
Juice from 2 lemons
1 cup chopped celery
3 tablespoons Italian flat leaf parsley
Salt and pepper to taste
Instructions:
Trim the chicken, and place in a bowl. Add the chopped herbs, olive oil, chopped garlic, and salt and pepper. Refrigerate for 1 hour.
Remove chicken from the fridge, and grill until the chicken is completely cooked. Let the chicken sit for ½ hour until cool, the place in the refrigerator for at least 3 hours, until cold.
Chop the chicken into small pieces, and place in a bowl. Next, add the mayonnaise, chopped walnuts, lemon zest, chopped celery, parsley, and season with salt and pepper.
Eat plain, or on a fresh buttery croissant!
