Preheat Oven to 400 degrees
For 2 Pies
Serves 8-10
2 cans (15 ounces) plain pumpkin
2 cans (14 ounce) sweetened condensed milk
4 tablespoons heavy cream
4 large eggs
1 cup brown sugar
½ cup granulated sugar
1 teaspoon cinnamon
1 teaspoon fresh ground nutmeg
1 teaspoon allspice
1 teaspoon ground ginger
1 teaspoon salt
2 (9 inch) unbaked pie crusts
Directions:
Place all of the ingredients in a large metal bowl, and mix until fully incorporated.
Place the mixed pumpkin into the pie shells and bake at 400 degrees for 15 minutes.
Decrease the temperature of the oven to 375 degrees and bake for an additional 35-40 minutes until the custard is set. Insert a toothpick into the center of the pie- if it comes out clean, your pie is done.
Top with real whipped cream and cinnamon.
If you prefer to make one pie, simply cut the recipe in half.

*Secret tips:
After mixing the pumpkin and all other ingredients, let it stand for at least 10 minutes. All of the excess air bubbles will come to the surface, and you will end up with a more dense pie.
After your pie is done cooking, open the door to the oven and let it rest inside for 15 minutes. This gradual cooling process will prevent cracks.
NEVER use a glass bowl to mix ingredients. Small glass shards can end up in your food.
