Stuffed Sweet Potato Recipe
If you’re a fan of sweet potatoes or yams, you’re really going to flip over this recipe. I came up with it last week for a vegetarian client of mine, and she loved it! Remember, sweet potatoes are full of nutrients that are great for you!
Ingredients
- Three large Sweet Potatoes or Yams
- Three Granny Smith Apples
- One Bartlett Pear
- ¼ cup Dried Cherries
- ¼ cup Dried Craisins
- ¼ cup shelled Walnuts
- ¼ cup brown sugar
- 1 Tablespoon Honey
- 1 Tablespoon Butter
- ¼ Teaspoon Cinnamon
- 2 Tablespoons Chopped Italian Parsley
- Salt and Pepper to taste
Directions:
Bake the sweet potatoes or yams at 350 degrees for 50 minutes, or until tender in the center. Set aside to cool. Peel and chop the granny smith apples and pear. In a large sauté pan, melt the butter then add the remaining ingredients. Sauté for a few minutes until the pears and apple become tender, but not mushy. Taste for seasoning, then let cool. Split the sweet potatoes down the center and push them open. Stuff the sautéed filling in the center. Bake on a cookie sheet for 30 minutes. Serve and enjoy!

I amazingly have the dried bing cherries in my kitchen…just used them for my latest version of the Spumoni Cookie that will be baked tomorrow. They are a refrigerator cookie so they need to firm up a day before baking.
