This is an amazing pesto– it’s delicious on pasta, fish, and chicken or beef kabobs.

Serves 4-6
Ingredients:
1 bunch fresh mint
1 bunch fresh basil
1 bunch fresh cilantro
1 cup roasted cashews
½ cup pine nuts
¼ cup organic honey
Zest of 1 lemon
Juice of 1 lemon
1 cup extra virgin olive oil
1 teaspoon sea salt
1 teaspoon fresh cracked black pepper
Directions:
Place all of the ingredients in a food processor. Blend thoroughly. Slowly add the olive oil, and then add the salt and pepper. You can adjust the consistency with extra nuts or olive oil.
