Uses For Leftover Lasagna Noodles
How many times have you made lasagna and ended up with a bowl of extra noodles? If you are like me, and usually make more than is needed of everything (inherent of being Italian), it probably happens almost every time you make the layered dish. Instead of guiltily eating the cooked noodles plain, as to get rid of the evidence, I have come up with some creative (and yummy!) ways to salvage them and would like to share with other lasagna-enthusiasts!
1. Haluski – Possibly the easiest journey from Western to Eastern Europe! Using lasagna noodles in a batch of haluski is as simple as it comes! Just cut up the leftover noodles in ½ inch thick strips, and stir into sautéed cabbage. Season to taste.
2. Pasta Salad – Although you may not have enough leftover noodles to make a family-sized portion of pasta salad, you may have enough for a lunch-sized portion for yourself! Slice the leftover noodles into bite-sized pieces, drizzle with Italian dressing or olive and vinegar, and add in your favorite past-salad veggies like chopped green pepper, tomato, cucumber, olives and chick peas.
3. Fried Noodles with Parmesan cheese – A truly indulgent solution to unused noodles! Fry leftover noodles in olive oil with some fresh minced garlic. When done, sprinkle with parsley and parmesan. These crispy delights make excellent toppings for salad, steak, soup and even mashed potatoes!
