This is a highly nutritious, flavorful soup with plenty of fiber, minerals and vitamins. If you substitute this soup in place of lunch or dinner once a day, you will find yourself feeling better, less bloated, and a few pounds lighter!
Prep time: 1 hour
Serves 4-6
Ingredients:
3 tablespoons extra virgin olive oil
1 cup chopped carrots
1 cup chopped celery
1 cup chopped sweet onions
3 quarts water
1 cup chopped green pepper
3 cups fresh green beans, cleaned and chopped
4 cups kale
4 cups chopped fresh spinach
6 cups chopped cabbage
2 cups stewed tomatoes
1 cup chopped cauliflower
2 cups chopped broccoli
1 tablespoon fresh grated ginger
1 tablespoon chopped garlic
2 tablespoons kosher salt
2 tablespoons fresh cracked black pepper
Directions:
Place 3 tablespoons of olive oil in a large pot over medium heat. Place the carrots, celery, and onions in the pot and sauté for 3 minutes. Add the water, and the remaining ingredients.
Continue cooking the soup for 30 minutes, add the salt and pepper, and serve.
If you’re interested in a non-vegan soup, simply add a few cups chopped chicken or beef. You may also use chicken stock in place of water.
