There’s nothing better than moist, homemade cornbread with soft butter and honey. This is an easy recipe- the results are delicious!
Pre heat oven to 375 degrees
Serves 4-6
Ingredients:
2 cups unbleached flour
2 cups cornmeal
2 tablespoons baking powder
2 tablespoons baking soda
1 teaspoon cayenne pepper
2 tablespoons fresh cracked black pepper
1 tablespoon salt
½ cup sugar
1 cup sweet white corn
1/2 cup melted butter
4 large eggs, beaten
3 cups whole buttermilk
1 cup shredded sharp cheddar cheese
Directions:
Place the flour, cornmeal, baking powder, baking soda, cayenne pepper, fresh cracked black pepper, salt, and sugar in a large metal bowl. Mix the ingredients with a whisk until everything is evenly incorporated.
In a separate bowl, mix together the melted butter, beaten eggs, and buttermilk.
Add the wet mixture to the dry ingredients, and slowly fold together with a rubber spatula. Add the sweet white corn and the cheddar cheese- continue to mix until all of the ingredients come together.
Place the batter in a 9 x 13 greased oven proof baking dish, and let sit for 15 minutes before putting in the oven.
Bake the mixture at 375 degrees for 35 to 40 minutes, or until the top becomes brown and an inserted toothpick comes out clean.
Serve with plenty of soft butter and honey!
Enjoy!
