Mango Salsa with Strawberries and Pineapple Prep time 30 minutes Serves 6-8 Ingredients 2 large mangos, peeled and diced 1 cup de-stemmed, diced strawberries 1 cup peeled, diced fresh pineapple ½ cup Vidalia or sweet onion, diced ½ cup diced celery ½ bunch fresh chopped cilantro Zest of 1 lemon Juice of 2 lemons 3 tablespoons extra virgin olive oil 3 tablespoons organic honey ½ teaspoon coarse, or kosher salt 1 teaspoon fresh ground black pepper Directions Place all of the ingredients in a medium sized bowl and mix gently.
