Monster Fish Sandwich Recipe
There’s nothing better than a fish sandwich made with fresh cod, and tartar sauce. When I bread fish I like to use panko crumbs– they provide an extra crunchy texture that make the sandwich extra tasty!
Prep time: 30 minutes
Serves 4
Ingredients:
4 pieces of fresh cod, 6-7 ounces each
1 cup unbleached flour
4 eggs, beaten
4-5 cups panko (Japanese) breadcrumbs
1 quart vegetable oil, heated to 350 degrees
1 teaspoon salt
2 tablespoons fresh cracked black pepper
Directions:
Season both sides of the fish with salt and pepper.
Place the flour, beaten eggs, and breadcrumbs in three large bowls of the same size in that order. Place the salt and pepper in the breadcrumbs and mix.
Put the fish 1 piece at a time in the flour, eggs, and breadcrumbs making sure the fish is coated completely with each ingredient.
Carefully place the fish in the hot oil and let cook for 4 minutes, until it becomes golden brown. Cook each piece of fish the same way. Place the cooked fish on paper towels to help absorb the excess oil.
Homemade Tartar Sauce
Ingredients:
1 cup mayonnaise
½ cup relish
1 tablespoon fresh lemon juice
2 tablespoons chopped Italian flat leaf parsley
1 tablespoon hot sauce
1 teaspoon salt
1 tablespoon fresh cracked black pepper
Directions:
Place all of the ingredients in the bowl and mix thoroughly.
Assembly of the Sandwich
Slice large whole wheat or plain hoagie buns lengthwise. Coat both sides of the bun with the homemade tartar sauce. Place the cooked fish on the bun. Top with sliced cheese, fresh tomato slices, and shredded lettuce. Cut in half and serve.
