This quinoa and feta salad recipe is light, nutritious, and delicious!
6 cups cooked quinoa
1 cup crumbled feta cheese
1 cup chopped Roma tomatoes
½ cup chopped celery
½ cup diced seedless cucumber
½ cup each chopped red, yellow, and orange peppers
¼ cup chopped scallions
½ cup quartered artichoke hearts
½ cup toasted pine nuts
¼ cup chopped flat leaf Italian parsley
1 tablespoon fresh chopped thyme
2 tablespoons fresh chopped basil
Juice of 2 lemons
1/8 cup apple cider vinegar
¼ cup organic honey
¼ cup extra virgin olive oil
1 tablespoon fresh cracked black pepper
Place all of the ingredients in a large bowl and mix thoroughly.
Let stand for 5 minutes, re-toss, and serve.
