Quinoa Salad
This is my recipe for a nutritious and easy to make cold quinoa salad- a delicious meal for my vegan and vegetarian friends!
Serves 6-8
Ingredients:
4 cups cooked and chilled quinoa
½ each chopped yellow, red and orange peppers
1 cup grape tomatoes, sliced in half
2 cups black beans
1 seedless cucumber, chopped
½ cup sweet onion
½ cup chopped celery
¼ cup finely chopped carrots
½ cup finely chopped of zucchini and yellow squash
¼ cup toasted pine nuts
¼ cup chopped pecans
¼ olive oil
3 tablespoons organic honey
Juice of 2 lemons
Zest of 2 lemons
1 bunch of Italian flat-leaf parsley
½ bunch cilantro
Salt and pepper to taste
2 tablespoons apple cider vinegar
Directions:
Place all of the above ingredients in a bowl and mix thoroughly. Let sit in the refrigerator for 1 hour, and serve.
