Thai Cilantro Dipping Sauce
I came up with this flavorful, delicious recipe for a beer tasting we had at the club. Thai Cilantro Dipping Sauce is perfect for chicken, pork, white fish, and grilled vegetables.
   Prep time                   10 minutes   Serves                         6-8   Ingredients   2 cups salted peanuts   ½ cup pineapple juice   ½ cup organic honey   1-cup coconut milk   ½ cup chopped fresh cilantro   ½ cup chopped fresh basil   3 leaves chopped fresh mint   Zest and juice of 2 limes   1-tablespoon fresh zester ginger   1/2 teaspoon cayenne pepper   ½ teaspoon cayenne pepper   ½ teaspoon fresh cracked black pepper   ½ teaspoon Kosher, or sea salt   Directions   Place the 2 cups of salted peanuts in a food processor and pulverize for 20 seconds.   Add the remaining ingredients and pulse until full incorporated- serve immediately.
