Santa Fe Chicken Recipe
This is an easy recipe; very flavorful, and perfect for summer!
4 chicken breasts
3 ears of corn
¼ each of red peppers, orange peppers, and yellow peppers
½ red onion
½ lemon, plus two slices for garnish
½ lime
½ avocado cubed
1 bunch of chopped cilantro
2 tablespoons of olive oil
Salt and pepper to taste
First, rub the ears of corn with some olive oil, salt and pepper, then place on the grill until cooked. Remove and let cool. Salt and pepper you chicken breasts. Season your heated grill with a small amount of oil, then grill the chicken breasts. When the breasts are completely cooked, set aside. Place a sauce pan on high heat, add 2 tablespoons of olive oil, and sauté the onions, and peppers. Cut the corn from the cob, and add to the pepper and onion mixture- sauté for 2 minutes. Squeeze the lemon and lime juice over the pepper mixture, add the chopped cilantro, and add salt and pepper to taste. Place the chicken breasts on a plate. Spoon the cooked pepper mixture on top. Garnish with lemons, limes, avocado, and a cilantro bunch.
