Vegetarian Cauliflower Crust Pizza
Pre heat oven to 450 degrees Prep time: 30 minutes Serves: 6-8 Ingredients 1 small cauliflower, equaling 3 cups shredded 1 egg 1 cup ricotta cheese ¼ cup grated Parmesan, Romano or pecorino cheese 1 teaspoon total chopped oregano, basil and thyme 1 teaspoon extra virgin olive oil ½ teaspoon salt ½ teaspoon fresh cracked black pepper Your choice pizza toppings Directions Preheat the oven to 450 degrees. Grate the cauliflower, then place in a large pot with water and 1 tablespoon of salt- cook until the vegetable becomes slightly translucent, approximately 5-6 minutes. Let cool. In a bowl or food processor, blend the egg, ricotta, cheese, herbs, garlic, extra virgin olive oil, salt and pepper. Add the cauliflower to the cheese mixture and combine thoroughly. Spread the crust over parchment paper, or an oiled pan. The crust should be ¼ to ½ inch thick. Bake the crust for 25-30 minutes, then add pizza toppings and broil until browned.
