Organic Brown Rice Salad
I made this brown rice salad today for a few vegetarian clients. It’s simple to make, and very nutritious.
This salad can be served warm or cold, with fish, chicken, beef or pork. Give it a try!
- 6 cups Organic Brown Rice
- ½ cup Walnuts
- ¼ cup each Red, Orange, and Yellow Peppers
- Zest of two Lemons
- ¼ cup Dried Currants or Craisins
- ½ cup Italian Chopped Parsley
- 1/8 cup Fresh Lemon Juice
- 1/8 cup honey
- ¼ cup Olive oil
- 2 tablespoons Apple Cider Vinegar
- Salt and Pepper to taste
Mix all of the ingredients together. Let stand for one hour prior to serving.
