Longhorn Steakhouse, Pittsburgh, PA

I’m not a huge fan of chain-restaurants. I usually prefer small, privately owned establishments because they often have their own personalities, and more importantly creative, non-corporate food. That being said, we decided to go to Longhorn Steakhouse for the most important reason of all- we had a gift card.

Veal Campobasso

I recently got some veal cutlets from Mountain States Rosen Company. They were sealed in easy to use pouches with the air removed. When I make scaloppini, (defn. small, thinly sliced pieces of meat, especially veal, dredged in flour, sautéed, and served in a sauce) I use a mallet to flatten the meat before searing. These cutlets were already perfectly thin and tender- no mallet required!

Pan-Seared Veal Chops

I recently had an opportunity to make some delicious veal chops courtesy of Mountain States Rosen Lamb and Veal. The product they provide is impeccably fresh, and easy to work with.

Happy Thanksgiving!

Coca Cafe, Lawrenceville, PA

I stopped by Coca Café in Lawrenceville to meet a client for breakfast this Sunday. When I arrived, there was a small line, probably 20 people. The café was due to open at 10am, and the locals were eager to be the first seated.

WQED’s Chris Fennimore

I grew up in a big extended family. We lived in my Grandmother’s house along with several sets of aunts, uncles and cousins galore. The kitchen was our common room. During the week we did our homework on the kitchen table. That’s where we had every meal and it was the site for about 6 hours of prep work leading up to the communal Sunday meal.

Conspiracy in the Kitchen

First of all, both Chef Kerber and Katie Lane are beautiful people; both inside and out. Kerber’s blue eyes rival Paul Newman’s (sigh!) and his quick smile is very disarming. Katie’s small, delicate frame effuses a grace and femininity from an era before either of these two was born. They’re attractive, good looking folks who don’t take themselves too seriously….until you get to the work part.
